In Defense of Bacon! Best Bacon Chocolate Avocado Pudding. Ever.

This pudding is everything a good pudding should be: rich, healthy, filling, chocolate-y, yummy…and with a bonus. You guessed it: bacon.  🙂

I know it’s the beginning of the New Year and everyone feels this moral obligation to cut back on their food intake, particularly anything that tastes good or is filling. I’m just not one of those people. (And it’s not just because I like bacon!)

I don’t believe that we have to sacrifice filling foods and flavor to save our waistlines. In fact, I believe that dense, filling proteins and fats are some of the very foods that induce natural moderation and can help keep our overall health in check.

Unlike carbs and sugars — which are only temporarily filling and cause blood sugar swings, addictions, and cravings — protein and healthy fats are satiating, sometimes for hours beyond the next regularly scheduled meal.

I’m here to advocate that yes, you CAN eat bacon/bacon grease EVERY DAY, and not bust the buttons off your pants.

You know what they say: “Everything in moderation, including moderation.” Pretty sure the fine print says “and excluding bacon.”

Anyway, just wanted to give you something to think about over the New Year.  🙂

BACON CHOCOLATE AVOCADO PUDDING

INGREDIENTS

  • 6 avocados, ripe or even a bit past ripe
  • 3/4 to 1 can coconut milk (full-fat preferred)
  • 1/3 cup cocoa powder, more to taste
  • 1-2 tbsp bacon grease
  • 1 tsp cinnamon
  • 1/2 tsp of vanilla
  • sweetener, to taste (I use non-glycemic sweeteners like stevia, erythritol, xylitol)
  • (Optional) cacao nibs, shaved dark chocolate, or coconut flakes, for garnish

INSTRUCTIONS

You can make this recipe with a food processor, blender, hand mixer, or with good old spoon-and-elbow-grease.

  1. Scoop the yummy green flesh of the avocados into a bowl.
  2. If the coconut milk has separated where the water drained to the bottom and the thick cream hardened at the top, blend, at least until well-combined.
  3. Add coconut milk and all other ingredients in the bowl.
  4. Blend till thick and smooth.

Refrigerate leftovers with a piece of plastic wrap pressed directly to the surface of the pudding.

  2. I can’t help but think it would have to be the ONLY Bacon Chocolate Avocado pudding EVER because I can’t picture Bacon, Chocolate and Avocado ever being combined into pudding, period — but I will take your word for it that it is delicious.

  3. I just came across a bacon pudding recipe in one of my cookbooks from 1701. Haven’t decided whether to post it or not – yours looks far more delightful!
