The dynamic duo: bacon and eggs.

The thing I love most about the bacon-and-eggs combination is its hearty flavor and versatility. Not to mention the perfect pair is quick, easy, and healthful to prepare.

To give credit where credit is due:

  • Bacon makes everything better.
  • Bacon also makes bacon grease.
  • Bacon grease makes everything better.
  • Bacon grease is also great for cooking eggs.
  • Eggs are a cook’s creative playground.

If you cook eggs in bacon grease, you don’t really need to add anything else. But I still do. For fun and adventure.  🙂

A recent “Cooking with Spice” class at a local co-op with 2 good friends reminded me how much I love spices and flavor (not just that of bacon).

So I tried a variation on the traditional and it turned out quite yum-tastic.

Turmeric & Curry Scrambled Eggs with Bacon

INGREDIENTS

  • 1 tbsp bacon grease
  • (optional) bacon
  • 4 eggs
  • 1 tsp turmeric (it doesn’t have much flavor, so use as much as you’d like!)
  • 1/2 tsp curry powder
  • salt and pepper, to taste

INSTRUCTIONS

  1. If you’re going to eat actual bacon too, cook the bacon, set aside, drain most grease out of the pan (but not all!). If not, warm bacon grease in a skillet.
  2. Scramble eggs and all spices in a bowl.
  3. Pour into heated skillet on medium-low.
  4. Cook until most shinyness is gone, stirring so eggs don’t burn or stick to pan.
