Bacon Artichoke Omelet

The addition of “artichoke” always makes recipes sound more gourmet to me.

As you can see, this omelet isn’t particularly gourmet. Especially as it’s doused in hot sauce, ha.

The lack of gourmet is partly due to the rusty effects of cooking in cast iron — but mostly due to my complete lack of photography skillz.  😉

Gourmet aspirations aside, throwing some artichokes, (blue) cheese, and crumbled bacon inside an omelet is, at the very least, deliciously satisfying and your belly will thank you.

Bacon Artichoke Omelet

INGREDIENTS

  • 3+ eggs
  • 1/2 – 1 pkg bacon
  • 1/2+ cup cooked artichokes (leftover or canned and drained)
  • 1/4+ cup (blue) cheese
  • bacon grease
  • salt & pepper, to taste
  • (optional) 1sp turmeric
  • (optional) hot sauce, to taste

INSTRUCTIONS

  1. Cook bacon, drain, and set aside.
  2. Drain some (but not all!) bacon grease from the pan, if necessary.
  3. Scramble eggs in a bowl. Add turmeric, salt, and pepper.
  4. Pour omelet mixture in hot, bacon-grease coated pan.
  5. Crumble bacon, artichokes and cheese over one half of omelet.
  6. When bottom is set, use a spatula to loosen up the bottom of omelet.
  7. Flip the half of omelet without toppings over the filled half and pat down with spatula.
  8. Continue to cook, just until cheese melts.
  9. Drench in hot sauce. Or don’t.  🙂

  1. I beg to differ. Cast Iron is one of the hot topics that chefs are fiercely divided over! Just because you’re using cast iron does not mean it’s not gourmet; and like the electric vs gas debate, some would say using cast iron is a requirement for gourmet!

    • love it! thanks urbanpaleochef! i know now that I’ve cooked with gas and cast iron I’ll never turn back!

      • Definitely! Gas & Cast Iron is without question the best way to go!
        Sometimes it’s just not up to you though; my last apartment was gas, so I used a great set of cast iron. My current apartment is electric (no gas hook up either!) so I’ve been forced to downgrade to my stainless set. I REALLY miss my Gas and Cast Iron!!
