Bacon, Red Pepper, Onion, Salmon and Blue Cheese Eggs

Go for bacon and a smorgasbord egg mixture.

You won’t be disappointed.

I love weekend breakfasts because you can use up leftovers! And you have more time to be creative (hopefully).

Bacon, Red Pepper, Onion, Salmon and Blue Cheese Eggs

INGREDIENTS

  • 3-6 eggs
  • leftover salmon or canned salmon
  • 1 small onion
  • 1/2 tsp red pepper flakes
  • 1 tsp turmeric
  • celtic sea salt, to taste
  • pepper, to taste
  • blue cheese crumbles
  • (optional) fresh parsley
  • (optional) bacon and/or bacon grease

INSTRUCTIONS

  1. If you’re having bacon (why wouldn’t you?), cook. At the same time, in a separate pan, fry onions till caramelized (here’s my easy recipe).
  2. Scramble eggs in a bowl. Stir in salmon, red pepper, turmeric, salt, pepper, and blue cheese.
  3. Drain bacon on paper towels, set aside, reserve a layer of grease in pan.
  4. When caramelized onions are done, stir into egg mixture and dump all of egg mixture into greased pan.
  5. Cook on medium-low, stirring to prevent eggs from burning.
  6. Serve eggs with bacon, a garnish of fresh parsley, and a smile. 🙂
