Bacon Bok Choy Saute

Bok, bok, bok, bacon!

You get your green veggies. You get your happy-belly bacon. Now that’s a good compromise. BOK!

Sorry. “Bok choy” is the weirdest-named vegetable. But… it is a good excuse to eat more bacon! Andddd, bok choy is great for you — it’s loaded with vitamins A and C.

Anyway, if you need to feel better about eating bacon, this combination of bacon and baby bok choy is simple, nutritious, delicious.

 

Bacon Bok Choy Saute

INGREDIENTS:

  • bacon (I used bacon ends)
  • bacon grease, enough to saute the bok choy
  • fresh baby bok choy
  • salt and pepper, to taste

INSTRUCTIONS

  1. Fry the bacon, drain on paper towels, set aside. Reserve  grease.
  2. Chop the bok choy.
  3. Saute the bok choy over medium heat for 5-8 minutes or until tender.
  4. Crumble/stir bacon into the bok choy.
  5. Sprinkle with salt and pepper.
  6. Serve and enjoy!

    I actually thought of you the other night when my hub and I went to McCormick’s and Schmick’s for dinner. They have an appetizer called Shrimp Kisses and you guessed it, shrimp wrapped in bacon and it was out of this world! I could have that another serving of that and just one more Manhattan.
