Bacon Roasted Chicken and Onions

Simple. Unpretentious.

There’s nothing fancy about this dish. It’s not a show-off. The bacon is, for once, just a humble team player.

It’s edible. It’s nourishing. This is why we eat, right? (Ok, ok, let’s be honest, also for taste and hobbies like 365DaysofBacon…).

But some days you want a little less Kim Kardashian and a little more Julia Roberts.

The point is — never, never give up the bacon.

Bacon Roasted Chicken and Onions

INGREDIENTS

  • bacon, cooked and crumbled
  • bacon grease
  • chicken, cooked (I cubed boneless, skinless breasts)
  • white onion, chopped
  • Celtic sea salt, to taste
  • pepper, to taste

INSTRUCTIONS

  1. Fry the bacon, drain on paper towels, and reserve grease.
  2. Pre-heat oven to 350.
  3. Slice onion and cube chicken, if desired.
  4. Place chicken and onions in baking dish.
  5. Drizzle bacon grease liberally over chicken and onions.
  6. Sprinkle with salt and pepper.
  7. Bake in the oven 10 minutes. Stir. Bake for another 5-10, or until chicken is cooked.
  8. Serve topped with crumbled bacon.

  4. This is exactly the way I like to cook – diggin’ it! I added a couple cloves of garlic to mine to fill in the “medium notes”, but simply amazing!
