Bacon Chocolate Haystacks

In honor of my Dad’s 50th birthday, I made him these Bacon Chocolate Haystacks.

Pa Bacon likes the mixture of chocolate, coconut, and nuts.

I hope he wasn’t too disappointed that I bacon-fied his chocolate coconut haystacks.

Note, the picture is intentionally black-and-white. You know … old. Like my Pa Bacon. (just kidding Dad, love you like bacon crazy!)



  • 4+ strips bacon, crumbled
  • 4 squares unsweetened baking chocolate
  • 4 tbsp coconut oil
  • 2 tbsp nut butter
  • 1 cup coconut, toasted
  • 2 cups nuts
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • salt, to taste
  • sweetener, to taste


  1. Cook bacon, drain, set aside in freezer or fridge to cool.
  2. If you want to toast the coconut – preheat oven to 350. Line a baking sheet with parchment paper and toast coconut for 4 minutes, stir, and toast another 2-4 minutes, just until golden brown. Take parchment paper with coconut off pan and set aside to cool.
  3. Melt chocolate in pan over low heat. Remove pan from heat.
  4. Stir coconut oil, nut butter, vanilla, and cinnamon into melted chocolate.
  5. Add toasted coconut, nuts, and crumbled bacon.
  6. Salt and sweeten, to taste.
  7. Spoon into cluster on baking sheet lined with parchment paper. Set in fridge to harden.
