Bacon Wilted Cabbage

I’m aware that the go-to St. Patty’s meal in the U.S. is some variation of cabbage and corned beef.

But I think you should know — this is not the natural nor preferred diet of the leprechaun.

Real leprechauns prefer bacon.

Just like cows never wanted to eat corn, soy, or grain on a feedlot, leprechauns never ordered a corned beef with sauerkraut on rye.

But they did eat bacon and cabbage.

  • Cabbage — because it’s green, and they like green. Obvi.
  • Bacon — because it’s the gold of food.

Just trust me.

BACON WILTED CABBAGE

INGREDIENTS

  • bacon (bacon ends work great for this)
  • bacon grease
  • 1-2 bags or heads of cabbage, chopped
  • salt & pepper, to taste

INSTRUCTIONS

  1. Fry bacon in a large skillet. Drain on paper towels, reserve grease in pan.
  2. Add chopped cabbage to pan with bacon grease. 
  3. Cook on medium-low for 5-10 minutes, until cabbage gets desired amount of wilted.
  4. Add bacon, salt, and pepper. 
  5. Sing. Dance. Chase rainbows and gold and such.
