I don’t know if spring’s in full bloom where you are, but it’s already been a damp, dreary April here. And it’s about to get worse.

There’s SNOW in the forecast. In APRIL? Booooo!

This gloom calls for a creamy, bacon-y soup recipe.

Bacon lobster bisque, perhaps?

Did your ears stomach just perk up?

This hearty recipe goes good with an old-fashioned book. You know, like reading. Turning pages and such. Heck, you could save a strip of bacon to use as a bookmark.

Getting risky, I know.

You’ll have to eat the bacon bookmark and destroy the evidence that you were actually do something so nerdy as reading.

BACON LOBSTER BISQUE

INGREDIENTS:

  • bacon
  • 1 tbsp bacon grease
  • 2 cups cooked lobster meat
  • 3 cups fish stock (or chicken stock + 2 tbsp fish sauce)
  • 2 cups water
  • 1 cup dry white wine (chardonnay)
  • 1 1/2 c tomato paste
  • 1 onion, finely chopped
  • 4 stalks of celery, finely chopped
  • 4 cloves garlic, pressed
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 3 tbsp coconut flour
  • 1/2 stick organic, grass-fed butter
  • 1 cup organic, pastured heavy cream
  • salt and pepper to taste
  • parsley

INSTRUCTIONS:

  1. Cook bacon, drain on paper towel, place in fridge to cool.
  2. Saute celery, garlic, and onion in a fry pan coated with bacon grease, just until soft.
  3. In a stockpot, bring stock, water, and wine to a rolling boil. Boil for 3 minutes.
  4. Add in tomato paste, celery, garlic, onion, bay leaves, thyme, parsley, and paprika. Turn heat down to low and simmer 20-30+ minutes.
  5. In a small saucepan, whisk together butter and coconut flour over low heat, just until thickened. Slowly add in cream. Do not boil.
  6. Remove bay leaves from tomato mixture.
  7. (Optional step, but recommended!) Removing tomato and veggie mixture from heat and puree in food processor or blender until smooth.
  8. Whisk together cream mixture with (pureed) tomato mixture.
  9. Stir in cooked lobster.
  10. Salt and pepper, to taste.
  11. Garnish with parsley and crumbled bacon.
