Tequila Lime Bacon Tacos

I love the easy breezy deliciousness of fresh Mex. There’s just nothing quite like the flavors of fresh lime, guac, tomato, and cilantro.

Of course, I can always think of ways to enhance.

Add tequila. Add bacon.
This is how we celebrate Cinco de Mayo in ‘merica.




  • bacon
  • serving lettuce for “shell”
  • Bacon Guac Awesomesauce or some other delish guac
  • toppings (your choice of meat, peppers, tomatoes, green onions, etc)
  • Tequila-Lime dressing:
    • 3 tbsp fresh lime juice
    • 2 tbsp tequila
    • ¼ cup coconut oil, melted
    • fresh cilantro
    • Salt & pepper, to taste
    • sweetener, if you must


TIP: The dressing works best if the coconut oil is melted and all other ingredients are at room temp.

  1. Cook bacon, drain on paper towels, set aside in freezer to get crispy cold.
  2. In a blender or food processor, pulse lime juice, tequila, and cilantro until smooth.
  3. Slowly add in coconut oil.
  4. Add salt, pepper, sweetener to taste.
  5. Build your own bacon taco and spoon the dressing over it!
