I may have said this before, but asparagus is not my fav veggies. This is not to say I dislike it. It just doesn’t doesn’t do much for my tastebuds.

Most days it’s just a weird green food that makes my pee smell bad. But,

Wrapping asparagus in bacon makes it worth the bad pee smell experience.

If you aren’t getting gout-worthy levels of asparagus in your diet … you might after this recipe.

All thanks to this great recipe from Chef Ani per the Whole Foods “A Salute to Bacon” cooking class I attended. 

She even demo-ed how to partly cook the bacon “blanch” it first in hot water so it would time better when baked with the asparagus, which is an AWESOME trick.

BACON ASPARAGUS BUNDLES

Yield: 4 side dish servings.

INGREDIENTS

  • 1 ½ pounds asparagus, tough ends trimmed
  • 4-6 thin-cut slices of bacon
  • 1 shallot, minced
  • 1 tablespoon sherry vinegar

 

INSTRUCTIONS:

  1. Preheat your oven to 400 degrees.
  2. Bring a large saucepan of water to a simmer.
  3. Add the bacon and cook for 6-7 minutes, or until some of the fat has visibly rendered from it.
  4. Make four piles of asparagus and sprinkle each with a little shallot and sherry vinegar.
  5. Season with salt and pepper, then wrap in bacon.
  6. Place your bundles on a cooling rack over a cookie sheet and roast for 8-10 minutes, or until bacon is crisp and asparagus is very tender, turning as necessary.
