Bacon Lobster Pesto Pasta

Bacon Lobster Pesto Pasta

Something about summer makes me crave salads, and pesto, and yummy lobster curls.

This recipe isn’t quite a salad. (At least, there aren’t any greens.)

Then again, it’s not really a pasta, either.

It’s a summer bacon dish: Fresh. Light. Easy to throw together. Easy to eat.

You can’t get much better than that.

  • bacon, crumbled
  • lobster meat
  • kelp, shirataki, or zucchini noodles

Herb Pesto:

  • 2 tbsp bacon grease
  • 2 tbsp coconut oil
  • small bunch of fresh parsley (stems too!)
  • 4+ sprigs fresh dill
  • 1 tbsp lemon juice
  • 2-4 cloves garlic (I used Bacon Roasted Garlic Cloves)
  • salt & pepper, to taste

  1. Fry bacon, drain, set aside in fridge to cool, retain grease.
  2. Make Herb Pesto by combining bacon grease, coconut oil, parsley, dill, lemon juice, garlic, and salt/pepper in a food processor or blender.
  3. Spoon Herb Pesto on noodles. Mix in lobster and bacon.

  1. Amazing! Do you think spaghetti squash would work in place of the noodles?

  2. I want to eat dinner at your house forever
