Bacon Buffalo Hot Sauce

This is some porky-butt-kickin hot sauce.

Can you guess the secret ingredient? 

Ok, ok … It’s bacon.

Surprising, I know.

Use it as a meat marinade, as a dunker sauce, as a burger glaze, as dressing, to make cauliflower more interesting, etc etc. The point is it’s good and versatile.

Personally, I used it as a marinade for chicken wings that were later grilled. YUM.

Like any hot sauce, it pairs well with blue cheese and more bacon.

If you’re into that.

And why wouldn’t you be?




  • 1/3 cup bacon grease, melted
  • 1-2 tsp crushed garlic
  • 2 limes, juiced
  • 3/4 cup Franks Red Hot sauce, or your fav hot sauce
  • 1 tsp other hot sauce for variety
  • 1/2 tsp black pepper
  • 1/2 tsp salt


  1. Warm bacon grease on stove top or in oven, just until melty.
  2. Stir in garlic, lime juice, hot sauce(s), black pepper and salt, to taste.

    A good thick smokehouse bacon (do NOT use the store bacon!): fry it up just right (reserve the fat for the Buffalo Hot Sauce). Drain well (I flatten it between layers of paper towels), and then dip it (use tongs) into melted semi sweet chocolate (I use a really good Belgian choc), cool on a rack, and it’s yum time! Store in freezer ziplocks in the ‘fridge.
