Bacon & Caramelized Onion Vinaigrette

Bacon Onion Oil –

It’s the most precious of all oils. Including petroleum.

I’m somewhat obsessed with caramelized onions … and the residual onion oil.

I could do a post solely on how fantastically incredible caramelized onion oil is, particularly when the onions are sautéed in bacon grease.

But, I realize not everyone shares my wacky and unusual … enthusiasm? … for onions and their byproducts. So I took it a step further and incorporated the onion oil into something more akin to a real recipe.

This makes a great salad drizzle.

Bacon & Caramelized Onion Vinaigrette


  • 3 tbsp bacon grease
  • 1 large onion, chopped
  • 1-2 tbsp vinegar (I used white balsamic)


  1. Saute chopped onions in bacon grease, covered (cast iron works best).
  2. When onions are brown and caramelized, remove onions from heat.
  3. Spoon out the bacon onion oil in a separate bowl, reserve. Feel free to eat the sautéed onions. You can reserve a few tendrils to blend in with the vinaigrette, if desired.
  4. Pulse the vinegar into the bacon onion oil. Add in reserved onions, if using. I did this in a Magic Bullet.
  5. Serve warm and drizzly.   😉
