BACON, LIVER & ONIONS:

cramping yo gramma’s style.

(wait, great-gramma’s style)

Either way, they’d both be proud.  🙂

If you don’t like liver, I understand. But if you merely think you don’t like liver… well, reconsider, dangit.

Organ meats — liver in particular — used to be considered super-nourishing and were valued more than steak. AKA, this recipe is another excuse for you to eat bacon and call it “healthy.”

(I mean, really, how can you argue that logic?)

 

BACON, LIVER & ONIONS

INGREDIENTS:

  • 1 pkg bacon
  • 1 lb liver
  • 2 onions, chopped in half then sliced thinly in 1/2 rings

(optional)

  • garlic, chopped
  • salt

INSTRUCTIONS:

  1. Fry bacon in large pan, remove bacon when crispy, set aside (in freezer, if you like it extra crispy). Leave the bacon grease in the pan!
  2. Fry chopped onions in the bacon grease, about 10 minutes, until soft and caramelized.
  3. Meanwhile, slice thawed liver into thin strips, lengthwise, about 1″ wide by 4-5 inches long.
  4. Push onions to one side of pan. Add liver to pan, pile onions on top. Salt, if desired.
  5. Saute liver a few minutes, until cooked on outside but still a touch pink on inside. (You don’t want to overcook it, or it can get tough and dry.)
  6. Add the crispy bacon when you’re ready to eat.

    My mother made us eat liver once a year.
    I could only eat it with lots of catsup on it.
    I should should look up some more recipes for liver and give it a go.
    Bacon sounds good, but not to keen on the onion part

    Just be careful on the liver cooking time. It is tender and tasty when done right. Too long in the pan turns it to brown chalk. It is healthy, and if done right, tasty.

  3. I’ve tried so hard to like liver, but I just can’t do it. As soon as I start eating it I automatically think back to my childhood: every Passover dinner, my grandmother would wedge me between the chopped liver plate and the horrific gefilte fish platter. Ughhhhhhh. I’d just pick out the bacon!
