Bacon & Herb Crockpot Chicken

No need to babysit your bacon when you cook it in the crock-pot!

I’d heard that slow-cooking is foolproof and guaranteed delicious. But I didn’t believe it nervous.

I’m new to the whole “throw stuff in a pot, turn on the heat, walk away for hours” concept. It seems too easy. I don’t feel like I worked for it.

But. Despite my fears, it turned out tasty-tasty.

DISCLAIMER: The bacon gives great flavor, but it won’t turn out crispy. Don’t say I didn’t warn you.



  • 4-8 strips bacon (raw)
  • chicken (breasts, thighs, drummies, whole)
  • water or broth (veggie/chicken)
  • chopped herbs, like fresh rosemary & thyme
  • 2 tbsp lemon juice
  • salt


  • onions
  • garlic
  • 1-2 tbsp bacon grease (for good measure, extra juicyness, and flavor)



  1. Mix water/broth, lemon juice & herbs. Pour into bottom of crockpot / slow-cooker / roaster. Add onions/garlic, if using.
  2. Add chicken. Rub salt into the skin. Sprinkle additional, if desired.
  3. If using bacon grease, spread/drizzle it on chicken.
  4. Lay raw bacon strips over chicken (alternately, chop bacon strips into small pieces and sprinkle over chicken and drop in broth).
  5. Cook on low, several hours, basting occasionally. (Sorry, you’ll hafta look up the proper time for the setting of your crockpot / slow-cooker / roaster)
