  • bacon grease
  • cooked (leftover) steak, chopped
  • eggs
  • 1 tbsp water

  3. Meanwhile, whisk together eggs in a bowl. Add water and lime juice, if using.
  4. Pour eggs and pan.
  5. Salt the eggs and drop in pieces of steak.
  6. Stir eggs, steak, salt, and spices in pan all together.
  7. Before eggs are firm, stir in crumbled blue cheese.
  8. Serve with a side of bacon and onions.  🙂

  1. Sounds great! What’s the lime juice do? Just curious. Flavor? Texture?

    • it does add a little mostly unnoticeable flavor… fills in the midtones, adds a little citrus.

but it’s totally not necessary if you don’t have any on hand! 😉

Back in my college football days:
Friday night was steak night in the cafeteria and Saturday morning the football team had steak for breakfast, but not with bacon !!!
