Bacon Mocha Chocolate Brownies

No, those chunky things in the chocolate ganache frosting aren’t walnuts.

THEY’RE CHUNKS OF CRISPY BACON.

For my birthday I had to have a supreme dessert that combined my most favorite, favorite foods. Bacon, on account of this blog. Chocolate, obvi. And a bonus flavor: coffee.

Which pretty much makes these a breakfast food.

I made ’em as my own birthday treat. I’m totally used to straight unsweetened baking chocolate, so I probably coulda made them a lotttt less sweet, but the fam likes their sugary treats, so I tipped in a bit sweetener than usual.

My dad was his usual level of suspicious at my cooking. He doesn’t like to try any food he hasn’t been eating for… ahem… 50 years. But, since he has quite the sweet tooth AND because he first let the kids taste test them and ask for seconds, he eventually figured they were safe for his consumption. Technically, he did take a coconut one instead of a bacon one (yes, I made two pans — one with coconut flakes in the frosting, one with bacon).

My auntie even asked for the recipe. So I guess they were a success!  🙂

BACON MOCHA CHOCOLATE BROWNIES

Bacon Mocha Chocolate Brownies
BROWNIE LAYER
  • 1 cup almond flour (I’m not sure if meal will work the same)
  • 1/2 cup unsweetened baking cocoa powder
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter or coconut oil
  • 1.5 cups sweetener (I use Truvia/Swerve)
  • 4 eggs
  • 2 tsp vanilla
 
  1. Preheat oven to 325.
  2. In a large bowl, mix almond flour, cocoa powder, baking powder, cinnamon, and salt.
  3. Melt butter/oil on stove.
  4. Stir in sweetener and vanilla. Pour this mixture into dry ingredients bowl (flour, cocoa, etc).
  5. Beat together liquid mixture, dry mixture just until mixed.
  6. Beat in eggs.
  7. Pour into greased 9 X 13 cake pan.
  8. Bake 25-30 minutes or until center is barely set and not shiny.
  9. Place on wire rack to cool.

While cooling, make the ganache frosting  🙂

BACON MOCHA CHOCOLATE GANACHE FROSTING
  • 4-6 strips of bacon, cooked and crumbled
  • 6 tbsp butter or coconut oil
  • 1/2+ cup powdered sweetener (I use Truvia/Swerve)
  • 2 tsp coffee extract
  • 2 tsp vanilla
  • 6 tbsp unsweetened baking cocoa powder
  1. Fry bacon, drain on paper-towel plate, set aside in freezer (to get extra crispy!).
  2. With beaters, cream butter/coconut oil, sweetener, coffee extract and vanilla.
  3. Beat in cocoa powder.
  4. Spread over brownie layer when brownie layer is mostly cool.
  5. Place in freezer/fridge to quickly cool/harden. Leftovers (?!) best kept in fridge.

      i wish you could order them! maybe i should start a Bacon-ry…

      you can get almond flour in most natural food markets, online. it’s a bit hard to find and not cheap, but worth it!
