Not only am I an active member of the Clean Plate club, but I’ve also been grandfathered into the You-WILL-Eat-Up-the-Leftovers club.

Consequently, I’ve found you can incorporate pretty much any leftover in eggs — and it will be awesome.

This includes meat, veggies, salsa/pesto/sauces, cheese, herbs/spices, leftover limes from last nights margaritas, shrooms (magic or normal), etc.

Just fry it all up in some bacon grease. Make that mush, that tasty mush!

(You weren’t surprised the secret ingredient was bacon grease, were you?).

You don’t have to measure or censor the leftovers you throw in. I’ve done all kinds of crazy combos. It’s weird, but it seems to always work out.

BACON VEGGIE SCRAMBLE

INGREDIENTS

  • bacon grease, and actual bacon if you want!
  • eggs
  • salt & pepper, to taste

leftovers like:

  • roasted red peppers
  • mushrooms (cooked)
  • fresh cilantro
  • fresh-pressed garlic
  • fresh or ground ginger
  • lime juice
  • blue cheese

INSTRUCTIONS

  1. Melt bacon grease in a pan over medium-low heat.
  2. Scramble eggs in a medium bowl.
  3. Add in all leftovers, salt, and pepper.
  4. Fry, stirring often.
