Bacon Kale & Garlic Saute

My very excellent friend Stephie gave me some of her homegrown, garden-fresh kale.

I had to find a way to properly honor the gift of kale.
Which is why I sauteed it in bacon grease.
There is no higher honor.

It was seriously delish and the slight bitterness of raw kale that I object to is totally removed. With (bacon) style.

Bacon Kale & Garlic Saute

INGREDIENTS:

  • fresh garlic, chopped or pressed
  • chopped kale, destemmed
  • 1-2 tbsp bacon grease
  • crumbled bacon, optional

INSTRUCTIONS:

  1. Chop or press garlic.
  2. Liquify bacon grease in a pan over medium-low heat and add garlic.
  3. Tear kale from stalk into chunks.
  4. Saute with garlic until desired tenderness, 5+ minutes.
  5. Crumble in additional bacon bits, if desired.

  1. The only problem with this recipe is that you say crumbled bacon is optional. It’s never optional!
