Is there anything better than sauteed mushrooms when they’re soft, browned, and ready to melt in your mouth? They’re so easy. And so flavorful. Yum.

I’m convinced that there are actually 6 basic food flavors, not 5, as asserted by these so-called flavor “experts” who clearly need to get their tastebuds examined. Pretty sure the 6 flavors are: sweet, bitter, sour, salty, umami, and BACON.  🙂

The following recipe combines the last two flavors — umami (mushrooms) and bacon (self-explanatory) — plus it adds booze, always a bonus, possibly the 7th flavor. (Seriously, how did these people come up with only 5 flavors?)

I also need to point out:  the addition of the booze in the recipe below was actually inspired by my mother. But the bacon grease was my idea. Now you see what kind of family we are. (totally kidding!)

Mushrooms Sauteed in Bacon & Red Wine

  • Mushrooms, sliced
  • 2-4 tbsps bacon grease, enough to generously coat the pan and the mushrooms
  • 1 tbsp of water
  • splash or two of red wine
  • (optional) cooked, crumbled bacon — because you really can’t go wrong with it

  1. Melt the bacon grease over medium-low heat.
  2. Add sliced mushrooms
  3. Stir to coat the mushrooms with melted bacon grease.
  4. Add water and splash of red wine.
  5. Cook until mushrooms are soft and brown and delicious.
  6. (Optional) Add cooked, crumbled bacon.
