Bacon Roasted Macadamia Nuts

These were really, really, really yummy. Then again, it’s hard to go wrong with macadamia nuts!

It’s funny; I find their flavor to be very light and un-special. They remind me of the taste of Cream of Wheat cereal we had for breakfast when I was a kid. Only, I guess more lumpy.

It must be the texture that makes them so delectable. That sort of smooth and waxy crunch and slide over your teeth.

Add a little bacon and salt to that…and yep. They make a fantastic snack. Dessert, even.




  • macadamia nuts
  • bacon grease, small amount, just enough to coat the nuts
  • salt


  1. Heat oven to 350.
  2. If bacon grease isn’t melted, stick in oven for just a couple of minutes, till liquefied.
  3. Roll and coat macadamia nuts in bacon grease.
  4. Spread parchment paper on a cookie sheet pan.
  5. Spoon the macadamia nuts, single layer, on the papered pan.
  6. Salt lightly.
  7. Bake for 6-8 minutes until golden, stirring once.
  8. Let cool on paper to completely reabsorb the melted grease. (You can stick ’em in the fridge, pan and all, to cool quicker!)
